Smoked Tofu Edamame Chinese Sausage Stir Fry
This simple and easy stir fry recipe can be enjoyed as is or it can be
transformed into a new vegetarian favorite by simply excluding the Chinese
sausage.
Serves 2-4
Ingredients:
4 lean Chinese
sausage, diced
1 pack smoked Tofu,
cubed
2 cups frozen Edamame
(thawed)
2 carrots, diced
3 celery stalks,
diced
1 tablespoon minced
garlic
2 stalks scallion,
diced
2 slices fresh
ginger, julienned
1 tablespoon
vegetable oil
¼ teaspoon salt
1 teaspoon regular
soy sauce
2 teaspoon teriyaki
sauce
¼ cup water
Directions:
1. In a small non-stick
frying pan, brown the Chinese sausage. Add ¼ cup water, cover and cook in medium heat for about 5 minutes (until no more liquid).
2. In a wok or a large
deep skillet, add 1 tablespoon vegetable oil, brown garlic. Add ginger and scallion. Stir until scallion is wilted.
3. Add tofu, edamame,
celery, carrots, salt, soy sauce and teriyaki sauce. Stir to combine all ingredients. Cover lid, in high heat cook for 5-7 minutes (stir occasionally).
4. Stir in the cooked
Chinese sausage. Remove heat and serve with white/brown rice.
