Swiss Chard Barley Chicken Soup

What could be more heart and stomach warming and soul soothing than a bowl of steamy hot chicken soup on a cold winter day?  This is no ordinary chicken soup.  This recipe is not only super easy to prepare, it is also very healthy as it contains two of the top ten superfoods - Barley and Swiss chard.

















Serves 4-6
Ingredients

Meat:
1 ½ pounds chicken breast, diced
2 teaspoons sea salt
½ teaspoon paprika
1 teaspoon garlic powder
½ teaspoon ground black pepper
2 teaspoons extra virgin olive oil
2 tablespoons dried chopped onion
1 tablespoon dried parsley
Vegetable:
1 bunch red Swiss chard (washed and cut into 1 inch segments)
Grain:
1 cup pearl barley (soaked in hot water and drained)

Directions:
1. Fill a large stock pot with half pot of water (about 15 - 18 cups).  Bring to boil.
2. Meanwhile, soak the barley in hot water; evenly combine all the “meat ingredients” in a large bowl; wash and cut the Swiss chard.
3. Add all the ingredients to the boiling water.  Cover lid and cook in high heat until water re-boils.
4. Uncover lid and stir several times.  Let it cook for about1hour in high heat (stir occasionally).  Remove from heat and enjoy.

Tip: You can substitute the “meat ingredients” with leftover Thanksgiving turkey or store bought rotisserie chicken (bone and meat).
