This quick and easy heart-warming nutritious pasta soup is one of my son’s favorite anytime meal. In fact, he requested this soup for breakfast on numerous occasions.
Time Required: 20-25 minutes
½ cup uncooked small shaped pasta (alphabet, elbow, tiny bowtie, etc)
½ cup corn kernels (can be fresh, canned or frozen)
1 celery stalk, diced
1 carrot, peeled and diced
1 cup chicken broth (low sodium)
2 cups water
¼ tsp celery salt
1. Put all the ingredients, except the celery salt, into a 3 quart stock pot and bring to boil. Uncover lid and let it cook in medium heat for 15 minutes, stir occasionally.
2. Turn off heat. Add celery salt, stir and serve.
